If I were to bid, say, $600 on a firearm with a $500 reserve.....would the bid show as $500 or jump right to $600?

I would think 600.00.
When you place a bid it is usually "my max bid" and it will increment to what ever amount will put you on top of current bids up to your maximum bid is how I understand it, but you will need to research on the auction side how it works to be sure since no one here in these forums is part of the auction side other than to share their experiences... This link explains it:https://support.gunbroker.com/hc/en-us/articles/222082088-Bidding-How-to-Buy-Items-in-an-Auction-
If you are the first bidder to reach the $500 reserve, your visible bid would be $500, but your "hidden" bid would be $600. This means that until someone bids above $600 you will be the winner.
As Mark said, it will go as high as the next increment up to the 600.
i like to peck away 5-10 bucks at a time to drive them crazy🤑
