It didn't turn out so good. It was done enough and flaky, but didn't taste to my liking. I'll stick to red meat.

I will assume you mean largemouth when you say bass. Largies from warmwater lakes can taste a bit off from the algae they ingest. Not the best choice for smoking, either.
But a smallmouth from high cold Rocky Mountain lakes is as delicious as walleye or perch. Even our channel cats are white and sweet. Smallies are better fried, and cats can be fried or smoked.
down here we smoke mullet. in fact many years ago in the small beer joints along the water it was served as bar food.
When I lived in Florida, I did, too. Tasty stuff, that.
I have a friend here in Utah who smoked channel cats. His "smokitty" was roll your eyes back good, but due to health issues, he no longer makes it. Lots of folks here smoke kokanee salmon and trout, also. Smoked trout added to a salad is really good.
I wouldn't think a smoked bass would be all that good. In fact I usually throw bass back in the lake. I would rather have a crapie, blue gill or trout to eat for a fresh water fish.
Man, there aren't many things better than smoked Mullet, also makes the best fish dip.
I also remember it as a bar food, split and smoked. Used to buy a whole smoked Mullet for $1.50 now they're $7 to $8 each.
Back in the day I would get a kitchen pass, from Sunday morning church............provided that I bought back plenty of filets-a-la-largemouth. My MIL was great at fried fish, potato salad, and Bar-B-Q beans with bacon.........for many a Sunday lunch.
I had great times baitcasting from my old Fishmaster tube.........even the day it reached 117 degrees in 1980. I got in and out of my rubber waders and kickers.......in record time!!
There is a fine restaurant called The Cove near here in Leland Michigan that serves a bloody Mary they call a "Chubby Mary." Super yummy with a smoked Chub!

...Agree 100%...Ive always caught Bass for sport, and chunk 'em back in...friends private lake (10+ acres) has some monster Bass...beautiful lake w/ a creek that runs thru the middle of it, lots of structure and a 100 yard long dam that of course slopes the bottom...
...The biggest bass has been a tad over 13lbs, not mine ;)...my biggest was just short of 9lbs...9lbs is going on the wall!...The lake is FULL of big Crappie, Channel Cat...the Perch & Bluegill average close to a pound...unless the bottom drops out of the barometer, always count on a couple hours fish cleaning...and LOTS of good eating!!...its got hot here a bit early, 100+ for several days now and for the near future...but Ill go and fish early, and late...
...Ive never had much luck during the middle of the day, on any lake, but a LOT of really big fish (several state records) are caught during that time...I think Ive fished about every lake in Texas, all the good ones, all the well known lakes, 2 lakes in Mexico, several in Arkansas...in the last 40 years or so, and I like the ranch lake the best...usually have the lake to ourselves, its quite except for the cows, its wonderful...
Smoked fish (chubs) I enjoy, I never would consider eating a bass😝
I don't think I've ever had fresh water bass, smoked or other wise, but as a kid my grandpa used to get sea bass and other types of fish off the coast of southern California near the channel islands and it was always good and I'm not a big fish eater.... but i still enjoy fresh shrimp and as a youngster we would catch lake trout rainbows I think that were pretty good.

Actually, biologists will tell you that strict catch and release of bass hurts the population. You need not feel bad about keeping a few 14-15" bass for the table. Those are both the best eating and the ones best to remove from the lake.
As mentioned above, bass from cooler waters are best.
I turn them loose because I don't want to eat them. They are fun to catch but I am not all that good with their taste. Almost any fish from cooler waters tastes better IMO.
