don't know if any of you all eat em this way, but I put mayonaise and a little milk to make a thick "sauce" and put it over/ mix together the sliced and skinned cucumbers, wife puts sliced onions in also, but I don't like onions. It is better if it sits in the fridge few hours to coat and soak in the cucumber slices. as I eat all the cucumber I just slice off some more and add to the "sauce". seems the day after is better once they soak all night. but to each their own.......... you may add just touch ranch dressing to the "sauce" for different taste

I let the cukes and sliced onions soak in vinegar and water overnight. Or I just slice them up and ear them with a little salt.

We just bring them in, don't bother to skin them, slice in to 1/4 inch slices. Put season salt on them and eat away. We often eat a late lunch so for the last several weeks cukes and some sliced cheese, maybe some crackers are our supper! Just a minute to prepare, nice and light, easy on our tummies!!
mom made them this way also, but I am not a big vinegar fan hence the mayo, milk mixture..........
Was thoroughly, and 1/4 in cut with rind on. Apple Cider vinegar with olive oil and cracked pepper. Yum.
Used to throw in some salt but cutting back on Sodium.
I like my cucumbers peeled. Just the way I was brought up I guess. Mom used to peel, then using a fork, run down the sides of each cucumber giving it a kind of fancy look when sliced into pieces. Putting slices into a mixture of apple cider vinegar\water salt & pepper soaked for a couple hours.
Served ice cold out of the fridge on a hot summer day as a refreshing appetizer!
