Wife brought home a small pumpkin. Think she's going to fry it up this week end. Yum yum.

I have never eaten fried pumpkin. Recipe?
Have no idea her recipe. She says just cut it into strips remove the Rine and fry it up like any other of the squash family.
OK, got more info from her. Half or quarter cut wedges of the pumpkin.
Remove pulp and seeds. Save seeds for roasting later.
Place pumpkin on cookie sheet in oven 350 for about 20 - 30 minutes to soften.
Cut rine off pumpkin, cut into smaller slices/ wedges.
Can coat (or not) with progresso bread crumbs and into fry pan of oil until nice and tender, golden brown breading coat.
Use canola oil as it can get hotter without smoking.
Can also bake in oven like eggplant, yellow squash, zucchini, ect.
Serve hot, season to taste with salt, pepper, parmesan cheese.

I boil and bake the seeds and like baking the slimey stuff around the seeds. Needs salt too

Sounds pretty good.........but I think you might have meant rind instead of "rine".
Oven toasted pumpkin seeds are awesome with some salt or Tajin..........
Never tried it. A friend and his wife introduced me to fried squash years ago. Loved it. Sadly, it turned into another recipe for me to find thirtyeleven ways to bleen up.
