Cherry Wood Smoked Duck

I had some buddies over last weekend. I put 4 ducks in the smoker and cooked them over cherry wood. Takes about 10 hours. The smoked duck was a big hit.

Looks delicious! I've got to try smoking ducks. The last one I did on the grill and had a 7 alarm fire. Duck fat, when it goes up in flames is very hard to extinguish.

I smoke cook a lot too. I did a wild turkey last week and the flavor was great. It was a bit tough. Think soaking it overnite in salt water would tenderize the rascal? Have you got any secrets for that type of thing?
I smoked two Whiskey Black Pepper Pork (St. Louis style) rib racks, this past weekend. (Along with) A Marinated Pork Tenderloin, some breakfast sausage and a bunch of Sweet potatoes, (sliced up) for Buddy treats. Cooked everything low and slow for a long time. Ribs fall off the bone. Mmnnn.......Mmnnn............😁
The ribs have been excellent. One more 1/4 rack for dinner tonight. (The same for dinner last night.) Need to remove the Tenderloin from the smoker, as well as the sweet taters.
Cooking with a Smoker is absolutely Awesome. Have never done duck.

I'm living in 1820, Rocky. We run on kerosene lamps, and I shoot deer with the 'ol flintlock.
That is a beautiful fireplace! I'm envious.
