I had some buddies over last weekend. I put 4 ducks in the smoker and cooked them over cherry wood. Takes about 10 hours. The smoked duck was a big hit.

Sounds wonderful!
Intensely-flavored smoke with intensely-flavored meat? Wow. No wonder that room was so dark! LOL!
Yummy
Very nice, Mr. Griggs!
Wooo boy that sounds and looks great.
Looks delicious! I've got to try smoking ducks. The last one I did on the grill and had a 7 alarm fire. Duck fat, when it goes up in flames is very hard to extinguish.
nice
I smoke cook a lot too. I did a wild turkey last week and the flavor was great. It was a bit tough. Think soaking it overnite in salt water would tenderize the rascal? Have you got any secrets for that type of thing?

I'm living in 1820, Rocky. We run on kerosene lamps, and I shoot deer with the 'ol flintlock.
That is a beautiful fireplace! I'm envious.
And fiery auto crashes
Some will die in hot pursuit
While sifting through my ashes
Some will fall in love with life
And drink it from a fountain
That is pouring like an avalanche
Coming down the mountain
Thank you. I built that fireplace with rocks I got out of Bear Creek.
Hard to beat those old simple round top smokers.
