The uncommon cartridge I shoot is the .38-40 that I reload for my great grandpa's Marlin model 1889 lever action rifle. It's also my favorite round to shoot. I continue to be amazed at how accurate this old gun is at 131 years old.
Probably not uncommon in the purest sense, but .35 Whelen, .220 Swift, 7x57, and .222 Remington. Sure seems like the .222 died off in a hurry. I don't remember the last time I saw anyone else still shooting one, especially in something old like my 722.

Not sure they are really uncommon, but .32-20, .44-40, 9mm Largo, 9mm Makarov.
I use to have a bunch Kasey has been auctioning them off for me now the most uncommon one that I have is 270 Weatherby Magnum and 300 hammer
.224 Weatherby, .228 Ackley Magnum, .256 Newton, 6.5 Remington Magnum, 7x61 Sharp & Hart, .300 Ruger Compact Magnum
44/40 and 38/55 using Starline brass to load them. Also, 32 Winchester which I load 30/30 brass with 32 win. dies.
I like to own and shoot guns in the less common calibers. Some of my favorites are:

357 Herret, in a Thompson Contender 10" bull barrel.
A newer round but not that common. 25 WSSM is a model 70 featherweight. Nice whitetail round

25 remington in the model 8. Not as often as I would like $$$
.357 Sig might not be that obsolete.
If the ole hillbille that got Siged in Asheville could talk he would agree. I think it might be the NCSHP round of choice.
I just remembered I sometimes pop of a few .220 swift and .357 maximum ounds.
