@JimmyJack I found my cookbook.. In fact it's the very cookbook that started it all. (Meaning my cookbook collection)
If you need me to type the recipe out let me know which one... And the recipe was in the Southern section.

2 pounds of veal, 2 cups of turtle. Why is it not called veal soup? It is a southern thing I wouldn't understand.

When I was a little nipper, there was a nearby VFW that had a game dinner every year, including snapping turtle soup. I can still taste that soup in my mind, and it was wonderful. It was similar to the Pendennis version above, with vegetables. There's no describing turtle adequately; it's unctuous but light with a unique taste.
...caught a BIG Softshell turtle at a buddies ranch once...decided to try turtle...I think you could shuck oysters with your teeth easier than cleaning one of those things, what a pain...got a LOT of meat off that turtle...read some old cookbooks I inherited and found a recipe for braised turtle, wow...I was very surprised, turtle meat is really good!...nope, didn't taste like chicken, more akin to a high quality cut of good beef...
Every reptile I have ever tasted, tasted like frog legs. Gators got the most meat.
Don't care for turtle soup but . . .Snapper done right is the best. And yes they are a pain to dress out but . . .Four different flavors depending on the cut! All very good.
I was bruising through my copy of "The Gun Club Cook Book" by Charles Browne. Had a turtle or terrapin recipes. Man, this book with the outrageous cartoons not PC. Things in 1934. Also, it's not much of a "cook book".
"Chasing The Gator" had a turtle soup. But I always thought turtle would be swampy and need to be purged for at least a week in a clean kiddie pool.
While typing this up I saw Justin do his thing. He also added a boiled egg. I would think the egg'll get lost in there. Dude needs a good knife.
On that page 32 it has BBQed possum shank to do it right.
I think you may be mistaken Grasshopper. The possum shank was used as bait to catch the turtle! 😁
