I have a big chunk of pig in my freezer 10 pounds? From when pork butt was less than a dollar on sale. I'm going on a Stay-Cation it'll be Taco Tuesday for a week. Don't know what the second week will hold. I may have to break out the smoker on this one and make Pico-De-Gallo. Maybe a bottle of Tequila? Pre-Cinco-De-Mayo? I got time to mull this over while the chunk defrosts.

For the large slabs of meat that I have frozen, I just get out the hack saw and take just what the wife and I can eat in a short period of time. Then repack and put the unused part back in the freezer. Last time it was a whole beef tenderloin that I bought for 8 bucks a pound. I could have……should have sliced it up before I froze it, but was in a hurry for some reason. That slab is LONG gone now and to find another tenderloin at even close to that price would be like hitting the lottery!
Maybe one of these days I'll buy a stainless blade for this task. Or buy a vacuum sealer to make a boil in a bag meal in a bag.
We bought our fist fod sealer many years ago
And any good deals if any, which is getting harder to find
we cut it to manageable portions snf freeze for latter with our kids moved out its just the wife and I and of course the pets
But now we just adjust the amount we seal and freeze
One of my ex's, (yup - there's 2), could cook like nobody's business. She would make smoked butt and cabbage/potatoes the same way you would do it w/corned beef - and man was it good.

Indeed it was - I hadn't gotten sober yet, I think I'm coming up on 18 years. In the second one it was the reverse - she was when we married but picked up and couldn't get it back - it was self-defense.
Took out the block. It's only 8 pounds. I reckon it'll defrost mid next week? Santa Fe Mexican supermarket is having a sale on tomatoes and jalapenos so good timing. Might have to get a couple bags of tortilla chips for the salsa while the pig defrosts.
So I got time to think about wet brine or dry rub? I was thinking about rubbing it down with Taco Seasoning (this is new). If I do that I'll be boning it out. That'll cut back on cooking time, too.

Rubbed it with Taco Seasoning and some "Red Hot" wing rub and threw it in the oven. Just wasn't up to do the fire watch. Came out pretty good and had tacos for a week. Double tortilla with cheese in the middle and used the pan juice to wet the tacos.
I also made oven roasted salsa. Basically while the pork was roasting I threw in tomatoes, onions and serrano/Jalapeno peppers. Then after a while I just threw it all in a blender with cilantro. That came out pretty good. For extra crunch I rough chopped onions and put that in the salsa.
