New marinade with Mango Pepsi
I bought short ribs (Galbi) last Friday and I wanted to try Korean "style" marinade. I have this "Mother" marinade in a Mason jar that lives in the fridge. I fist chop up green onions and fill the Mason jar to 2 cups (it wilts and compresses), mince or blender the garlic and grated the ginger to 1/2 cup line. Then fill the jar with soy sauce and forget it in the fridge. Typically 4 months to let the garlic to mellow out. Also as you use the liquid add back soy sauce. I don't use the garlic, green onion or ginger out of the "sauce". Sometimes those bits gets bitter. Like after couple years?
I used 4 table spoons (should've used 8) of the "Mother", too much short ribs so the flavor seemed weak. Not bad for starter. 1 American pear grated, 1/2 medium onion (better to use one whole medium onion) grated or puree. 4 Tablespoons honey, 1/2 can Coke/Pepsi (I had Mango Pepsi) more to make it more wet. TASTE IT. It should be even salty and sweetness with garlic and gingery taste. Add more honey for sweetness or salt for salt. I may try fish sauce for that extra some-some next time. Now 2 Tablespoons of sesame oil I like Kadoya. Some other brands taste burnt but not Kadoya. Now let the meat sit in the marinade for at least over night but a day and a half is better.
I suppose you could blender jalapeno/serrano for that "kick" or habanero or go nuts with some ghost pepper. You guys can try it.
