I need some good recipes to try any ideas?

    ...BW, here are a few things...will have more as I revive.

    1) Fillets of trout (your choice, type and amount)
    2) Brush w/warm REAL butter, both sides.
    3) Sprinkle w/FRESH ground pepper corns (white "looks" better/BLK is fine.
    4) Sprinkle w/lime or lemon/lime salt (like you can get at beer stores, in little pkgs. or tiny bottles..NOT juice, it will "cook" the fish because of the acid, sprinkle, don't KILL it!)
    5) Wrap/and seal tight in foil.
    6) Throw in a 375 oven, and ck after about 12 min.
    and there after every 3 min. till flakey, if you dont keep an eye on it every few min....you will over cook it quick.
    Simple, but really good w/trout (and other similar white/light/not real "fishy", fish.

    FRIED CAT FISH

    1) Cat fish fillets (your amount)
    2) Brush both sides w/a good dark brown mustard (BRUSH!, don'kill it! reg. yellow will wk. in a pinch.
    3) Let set in fridge for at least 3-4 hrs.
    4) Salt, I like Kosher, tastes SO much better than regular salt,
    lightly.
    5) FRESH ground pepper corn, white is right, but BLK wks.
    (to taste)

    Now for the corn meal mix.
    6) Big bowl, add enough yellow corn meal to allow dredging of all the fish.
    7) Add 1/4 tspn. garlic powder per 1 lb. of corn meal.
    8) Add 1/2 tspn. paprika per lb. of corn meal.
    9) Stir/whisk garlic/paprika into corn meal...really well.

    Now for the oil.
    10) I have a fish fryer, but a reg. deep fryer wks. Peanut oil is best, but use what you prefer.
    11) Heat oil to 365-370.
    12) Dredge ea. fillet both sides thru corn meal mix., cover well, mustard helps it to stick fine.
    13) Once oil gets to right temp, drop in, carefully.
    Cooking time will vary w/amount fish you cook at a time, as each batch will cool the oil down. Wait till oil gets bk to temp. BEFORE adding any more fish...or all the corn meal will come off.

    I'd say to an 8 qt. pot, you will need about 3/4 gal of oil, whatever it takes to fill about halfway.
    You can add about 2, 2 1/2 lbs. of fillets to the pot at one time, depending on fillet size.
    Fry till "toasty" brown, probably about 6-9 min. per batch, then ck to see if fish is flakey, if not, ck every 2 min. till it is flakey. GOOD Fried cat fish...[;)]

    I'll write dn. some other stuff later instead of trying to do it on the fly, from memory, my slow brain is full of recipes, just don't have 'em written dn.
