Hush Puppie Recipe, One, but post yours....

...Any fried fish you gotta have Hush Puppies, period. Good w/any kind of fish too.
STUFF(better known as ingredients)
1) 1 cup yellow corn meal
2) 3/4 cup flour
3) 1 tsp. baking powder
4) 1/2 tsp. salt (kosher, not because I'm jewish, it's just better, or sea salt is great too)
5) 1/2 tsp. FRESH ground black peppercorn, already ground Blk/pepper wks. if you just goota use it,...lazy
6) 1/4 tsp. fresh minced garlic, ok, powder if your lazy
7) 1/4 cup Beer for puppies, so drink the rest
8) 1 small onion, minced, your onion, your choice (green are best)
9) 2 eggs, free range, or store bought if your lazy
10) 1/2 cup milk, fresh, or store bought if your lazy,...[:D](kidding)
HOW TO
HEAT OIL TO AROUND 365, I LIKE PEANUT OIL, BUT YOUR CHOICE.
MIX EVERTHING IN BIG BOWL, WELL.
DROP IN OIL BY SPOONFULL, OR WET YOUR CLEAN HANDS W/WATER AND ROLL AROUND INTO A TOUCH SMALLER THAN GOLFBALL SIZE, DROP IN OIL.
HANG TIGHT, AS THEY JUST TAKE A FEW MIN., AS THEY COOK, "ROLL" THEM AROUND IN OIL, AFTER THEY FIRM UP, (YOU NEED ENOUGH OIL FOR THEM TO FLOAT WELL)
WHEN GOLDEN BROWN, DIP OUT, DRAIN...enjoy, makes about a dozen
...I use a tool for a wok, for rolling them around and dipping out, "flat wire basket" on bamboo handle, works great, anything you have will work.

1 cup all-purpose flour
1 t. salt
1 t. baking soda
1 t. baking powder
1/2 t. garlic powder
1/2 t. cayenne pepper
2 cups cornmeal (more or less)
1/2 cup chopped green onion
1 cup whole kernel corn
2 eggs
1/2 cup buttermilk
Mix all ingredients well, then add 2 T. TexMex hot oil (of you choice) and mix in.
Spoon batter into hot cooking oil and cook
about 2 minutes each side
1/4 cup minced onion
1/4 pound raw shrimp, shelled, deveined
1 whole jalape?o, seeded, minced
1 teaspoon chopped fresh parsley
2 teaspoons vegetable oil
2 cups white cornmeal
1 tablespoon all-purpose flour
1 teaspoon baking powder
1 teaspoon salt
1 1/2 cups water
1 egg, lightly beaten
1 tablespoon melted bacon drippings
Oil, for deep frying
Saut? onion, shrimp, jalape?o and parsley in 2 teaspoons of oil for 1 to 2 minutes. Set aside.
Mix together cornmeal, flour, baking powder, salt.
Bring 1 1/2 cups water to rolling boil. Remove pan from heat. Pour in cornmeal mixture; beat well. Cool 2 to 3 minutes. Add saut?ed ingredients, egg and bacon grease, beating well after each addition. Completed dough should be fairly dry but not cohesive. Cool.
Fill pan with 3 to 4 inches of oil. Bring to 375 degrees F. Drop full teaspoonsful of dough into hot oil and fry about 1 minute, until golden brown and cooked through. Drain and serve hot.
Makes about 30.
...Hush puppies were made for "adding" a gazillion things to them, but vanmeters recipe has elevated them to "appetizer" status!
