I just got thru with some of these, my eyelids are still sweating.
Dang, they are good! The heat will depend on the jalapenos you use, just never know.

CHEESE STUFFED JALEPENOS

1. 1 doz. fresh BIG jalepeno peppers. Get the biggest ones you can.
The pepper itself should be close to golf ball size a round,
and 3 inches long.

2. 8 oz. pimento cheese

3. Small pkg. of cream cheese

4. 1/8 tspn. garlic powder

5. 1/8 tspn. onion powder

JALEPENO PREPERATION

Slice the jalepenos in half long ways
Try to cut the stem in half as you do, don't have to,
but it looks good, and gives you a "handle"
Scoop the seeds out of the pepper halves with a spoon

PEPPER STUFFING PREPERATION

Dump the pimento into mixing bowl
Add garlic powder
Add onion powder
Mix well
In a seperate bowl, beat the cream cheese till soft
Now spoon cream cheese on top of the pimento cheese mix, and
blend in only enough to see "swirls" of orange and white.

Now spoon "stuffing" into each jalepeno half, refrigerate
until chilled. These are great with fried fish,...or anything
If you want these to look really good, for a get together,
after you stuff the peppers, sprinkle with a littl paprika

...wash your hands AFTER you cut and seed the peppers, not just before...learned the hard way years ago! [:0]...wont go into the painful details. If I do a LOT, I wear those tight funky surgical gloves, pop 'em off, chunk 'em.

Melly Please post the recipe for your peppers when you get the time...oh yeah, congrats on the "new" one comming ya'lls way, I think...one daughter was/is/always be enough for me! Love my three grand kids though, my little hunting and fishing buddies. 2 boys, one girl,...they are fantastic!...[:D] [:D]

    Stuffed Jalapenos
    1 lb white crabmeat
    1 cup onion finely chopped
    2 ribs celery, finely chopped
    1/2 cup margarine
    1 tsp minced garlic
    3/4 cup plain bread crumbs
    2 eggs, well beaten
2 dozen jalapeno peppers (halved and seeded)
    2 cups Fish-Fri (corn flour)
    4 dashes Tabasco sauce
In a Dutch oven, heat margarine over medium heat. Saute vegetables until tender. Flake crabmeat. Shake four dashes Tabasco onto crabmeat. Add to vegetable mix. Stir well and cook for fifteen minutes with lid on. Remove from heat. Add bread crumbs and mix well. With a tablespoon fill cavities of halved jalapenos. Dip stuffed peppers in egg then roll in Fish-Fri (corn four). Fry in hot oil until golden brown.

Ok first off I think zippy is confused I just had a lil girl...We now have 2 kids (a boy and a girl) however I have been pregnant 3 times in the last three years..I think that zippy may have mixed something up last night when we were talking [:D]

Ok now for the peppers..This is the recipe I use

    Ingredients...
    24 Jalape?os
    ? lb of pepper jack
    ? lb sharp cheddar
    1 block of cream cheese
    Milk
    1 tsp. garlic
    1 tsp onion powder
    2 eggs
    1-1 1/2 c. corn flakes
    ?- 1 c. flour
    Directions

Cut jalapenos in half long ways and remove all seeds.
With a mixer beat cream cheese and just enough milk so it is smooth add shredded pepper jack and shredded sharp cheese mix well add spices and set aside.
Mix 2 eggs and ? c. milk in one bowl
Mix flour and crushed corn flakes in another bowl
Spoon cheese mixture in to each pepper
Pack cheese mixture in to peppers so even with top of pepper
Roll in egg then in corn flake mixture

If you want to bake these put them on a pan and directly in the oven at 350 for 15-20 minutes.

If you want them crunchier (like restaurants) put in fridge for about 30 minutes then fry in oil until brown.

Either way they are great! I usually bake them first then the leftovers get froze and fried the next time I want them

If anybody has any questions let me know
