Saltfish?

Is coastal VA the only place saltfish is eaten?

    [:D], might be, only "saltfish" I know of...is "cured" fish...

    To make saltfish, Herring, Shad or other migratory fish is used. They are filleted and soaked in brine for about a day. The filets are then put up in layers of salt for long term storage without refrigeration. My grandfather used barrels like the Colonials did.

    To cook, you soak them in fresh water letting the time and number of times the water is changed control the degree of saltiness desired. Then dip them in beaten egg, roll in cornmeal or flour and fry.

    sounds like a heck of a lot of work just to eat some fish. is it worth it?

    Yes for me it is. We in VA, also salt cure and smoke our hams, call them Smithfield Hams.

    ...yeah a lot of ways to fix fish, and that sounds really complicated, but good. Now salt/smoke cured hams...NOW we'er talking...[:D]
