Anyone ever boiled little chuncks of perch till they float, then dip them in hot butter. Heard it was almost as good as lobster but never tried it. I never want to try new recipies with the pearch i catch in case i dont like it. Hate the thought of ruining good perch fillets

...man, it sure shouldn't take long...like maybe a minute or two.
Over cook it, and you have mush, REAL quick, I would think...[:0]

I boil perch in a black iron skillet for a few minutes-doesn't taste bad at all. If i have some that are to small to fillet, boiling will make the meat fall right off the bone rack. You can do the same with any boney fish such as the northern pike etc.

I use to "blanche" strips (approx3/8 x an inch or so)
of red perch and dip 'em in shrimp
cocktail sauce. Poor man's shrimp and
    they were great.
