How will I know when it's time to get my revolvers worked on and retimed as it were?

I shoot them quite a bit (a Ruger GP100, SP101, a Rossi 357, two S&W 629s) but I mainly put mild stuff through them with the occasional full power load (less than 10% in the 44s, <30% in the 357s). They were all used when acquired but I have no idea how much.

I just don't want to face the zombie hordes with less than optimally functioning primary sidearms.

I really wouldn't worry about it. Maybe think about timing if accuracy fell off and other factors are all ruled out.

Slowly cock the hammer and watch the bolt for proper timing.

The way I check for lead spitting is to cut the bottom out of a heavy brown paper grocery sack. Fire the pistol with bag as a shroud. Lead being spit will penetrate the sack, un-burnt powder usually doesn't.

Most revoler PISTOL-SMITHS will have a set of Range Rods one each for each bore size . With the pistol unloaded slowly cock the hammer and slide the range rod down the bore. It should not touch the mouth of the cylinder on either side of of all 6 chambers.

My revolver smith suggested pointing the barrel at the ceiling, putting a bit of drag on the cylinder with one hand and slowly cocking the hammer or pulling the trigger (double action only PPC pistol) and seeing if the cylinder locks before the hammer drops.

If it doesn't, it's out of time.

Needless to say, empty revolver.

It can also spit if throat isn't properly funneled or too large cylinder gap..
Let left thumb drag lightly on cylinder as you slowly cock single action and double action. If cylinder lock doesn't fall into cylinder slot when hammer is fully cocked then timing is out.
Generally when double action shooting , the cylinder will have enough speed to reach the locked position if a bit out of time but wont lock up in slow, single action cocking

My colt offices model is out of time. It fires ok single action but double action the cyclinder travels too far, the dog misses locking up the cyclinder and the hammer hits the cartridge on the left side missing the primer. I need to call my gunsmith and make an appointment to see him. It could be the star wheel is worn.
