Was duck hunting in Louisiana awhile back and had breakfast in a local place.  The only thing I remember was the waitress suggested we order the smothered, covered, spattered and smattered!?  What ever it was it was a real tasty breakfast I'll never forget :)

Sounds great! I was born in Virginia and we were mostly exposed to Smithfield country Ham and home fried potatoes n onions with some hot sauce and Ketchup.
Moved to South Carolina as a teen and grew right fond of grits, but I like em plain with salt N pepper.
My Bacon CRISP enough to snap, almost any sausage, and I can eat most any eggs but favorite is fried hard.
    Now I am hungry

Why don't we go to school and work on the weekends and take the week off!

Good Lord, now you went and done it.
Goodnight Brothers country ham, from Boone, NC, two eggs over easy, home fries, and biscuits and gravy from the Tartan in Linville, NC, Manna from heaven. Open from 7 am to 2 pm, breakfast all day. And 84 before you get started, I have never eaten all this at one time.
84 I stopped at Lowe's food in Invershield, may have it in the Boone store to, they just have started selling in house smoked and BBQ pork, fish, and beef. Got a rack of baby backs. 6.99 a pound. Pretty good fixins, but then I had not eaten any in a couple years. There are a few times in the day when you can get them right of the cooker but they are a buck or more in price. Place was crawling with flat landers.

I have to say... the princess grew up in the south, thus when we go back to there to visit we always must have grits.
I always try them but so far I haven't been able to call them good.

Maple syrup on grits is an abomination warranting the death penalty. By cruel and unusual means - to match the offense.
Country ham is too salty for me, but a thick slab of baked ham suits me just fine. Grits with butter, S&P. Eggs done the simple way - sunny up with runny yolks to dab up with your rye toast. A small cup of fruit on the side and black coffee. THAT's breakfast.
    I may be a bit crazy - but I didn't drive myself.

I am more likely to eat bacon or sausage and eggs for supper than for breakfast.  I put butter and salt on grits but my Dad applied sugar.  Urp.

I like grits with butter salt and pepper, My Dad would put a bowl of them in the fridge overnight, take them out the next morning, slice about 1/2" thick and fry the slices in bacon fat until browned on both sides. Served with bacon and eggs over easy. Now I HAVE to pick up some grits tomorrow, dang you, Don!  >:)
I'll report back from the cardiac care unit later!

Grits.  The name implies the feeling your mouth gets when you eat them! :p

No shrimp and gravy or pan juice from cooked shrimp? Got to try garlic butter shrimp sauce over grits with lots of fresh ground black pepper.  Also I like to eat it cold and solidified with a bit of jam or syrup. I got to go buy some.
