I am not a great grill master. The usual stuff, burgers, brats and a few steaks.
Older son can grill you up a 7 course meal.
I like cooking over a wood fire.
Just started a fire now, to do a couple of steaks for 'da wife and me.
Some maple and a apple.
Son ONLY uses Cowboy Charcoal.
Who else just fires up a wood fire?

Wife's cousin from Arizona sends us mesquite and I send him hickory. I smoke ribs with both.
Nothing says efficiency like going outside and cranking on the propane. That sucker'll get up to 600° in nothing flat.

I like using charcoal. If I was gonna get serious about cookin' with wood I'd get one of these...

never did steaks or burgers, but around here you can't do a bonfire without hotdogs and marshmallows.............
My late father in law got me started on cooking all sorts of meat over a nice hot coal campfire using a long shaft of green wood many years ago.
Kind of like the way kids cook hot dogs but doing things like small fish, chunks of beef steak, pork, small pieces of chicken chunks, and anything solid enough to stay on the stick. You just had to really watch out that your stick didn't get weakened by the heat before the meat was done. Each piece of meat was consumed right away after cooking and another was put over the fire with a fresh stick.
Took a while to get that full feeling but it also allowed for lots of BEER to be consumed! 😁

We usually do a campfire out back, twice a month with all our friends. We cook all kinds of game over it. My buddy made a really cool spit for us and a stainless steel grate, for cooking anything from rabbits, to Venison. Last month, we cooked a pheasant and some fresh white perch, that we caught. We love being rednecks. I can't ever imagine being a city dweller.
