Canned up 10 pints of hrseradish today. Came out great and will give most of it away for christmas presents.
FYI don't can horseradish in the house well the wife is gone out to lunch. She WILL not be happey when she gets home.

BTW: To y'all who grow u'r own(H-Radish, that is[;)]) how do i get started? Does it start from seed, sprouted and potted up, like tomatoes?
Life would be a much duller place, without it. I love it, fresh grated and crusted on a beef rib roast. Then mixed with a little Hellmans Mayo for prime rib or even a round/rump roast.. I put it on burgers some of the time. Try that y'all, you'll like it!!

It grows and looks like a sugar beet or large turnip.

There's a bar in Eau Claire that serves ham sandwiches and roast beef sandwiches on waxed paper. The servers always put a jar of horseradish on the table and (if they don't recognize the customers) warn people to watch out for the sauce. It will clear the sinuses and bring tears to the eyes. I love it.

Where is this bar In Eau Claire? I'm only about 50 miles north of there right now. I love horseradish on chicken, beef, oysters, and most everything else.
The bar is called Ray's; it's on Water Street, a few blocks west of the main cluster of businesses. Year-round, they also serve excellent bean soup, and split pea soup which people who like split peas tell me is also good. In cool months they serve a beef stew called "Spanish stew" that I enjoy a lot.

Interesting. Horseradish root, when planted, will sprout anew next spring. I don't know when to harvest, or let it be and grow but...
If left unmolested, the roots will 'run', and can predominate a section of the garden, much like strawberries, or mint. Best, Joe

you can harvest it in any month with the letter r. not may june etc. that is what i was taught
