Bolt action rifles are plentiful, but again Browning makes some real beauties that shoot great. I have a 1969 Browning Safari 7mm rem mag that shoots better than I can hold.
Winchester and Marlin lever actions make great deer rifles, the older the better![:)] If you want one of the handiest rifles ever made then look no further than a Winchester model 92 in .44/40 or .38/40 for brush hunting deer.
2 x 16Ga + 8x57JR (or 9.3mm).

I'd just stay with my old tried and true 1956 Winchester Model 70 Featherweight chambered in 30-06.
+1, Exact same here with Redfield Wide View(TV)1 3/4 to 5 power and JR-70 Redfield one piece mount and medium rings to clear bolt handle.Been refinished four or five times. Have shot a truck load of deer with it. Know I am old school but In my humble opinion best set up ever for Whitetails in Eastern United States.

A nice custom built flintlock Kentucky rifle in 45,50, or 54 caliber
would be another fine option for the man who has everything and is looking for more excitement in life.
You will have to scale down your shooting range out to a max of 100 yards.

I'd go with a known quality local gunsmith build over a "name" shop (I have 2 such gunsmiths near me).
Hint, if he's backed up less than 2 years on his work, you don't want him as a builder.
I have 2 such rifles. One built in 1977 that's on it's 3rd barrel, Mk-X receiver, Canjar trigger, Fajian walnut stock, Shepherd optics in Redfield mounts, 1-12 25" #5 Shilen barrel chambered in 30-06. The other is a CZ 550 Mag receiver/trigger, McMillan "Baker" stock, Nightforce optics on a 20MOA CZ rail, Harrell brake, 1-12 30" #8 Lilja barrel chambered in 300 RUM Improved.

So for my next perfectly good deer rifle, I'd like a Winchester model 70, blue & walnut in 270.
You know, if it's just for deer, you might try one of the 6.5's. Some of them are a real pleasure to shoot, even in a light rifle.. A good rifle good glass, on a solid platform, good trigger. I better quit or I'm going to talk myself into another rifle.

I had to reconsider when it was either a 6.5x55 or 25/06. I chose the 06 because it works both varmit and animals. Using an encore now but looking at the Remington 700 long range. Longer range and the Sig 3000 comes to play.
Custom stocked(by my Dad) 721 Remington 30-06 worked fine this past November for this Wisconsin Whitetail.

Now I have a hankering for a custom rifle in 257 Roberts. Not sure why, but I want one!
Winchester Model 64 Deluxe 30-30 is also a classic deer rifle along with a Savage 99 in 250 Savage.......
I prefer the older tried and true classics. I'm not a fan of the new stuff......A Browning safari Grade or a Pre 64 Winchester Model 70 can both still be bought fairly reasonably, and I doubt any of the new stuff is any better!
