The skis, bindings, and poles are in overall great shape. The skis are mainly just dirty/dusty. Just wipe them down with a water dampened cloth? The leather on the bindings and poles is in nice shape too, and I want to keep it that way. Recommend a leather preservative/conditioner? TIA for input. FYI skis and poles will be displayed in the house.

I would stick with just a microfiber cloth to clean the wood. Any type of liquid may cause the grain to raise.
We always used neets foot oil or boiled Lindsey’s oil on saddles and bridles. Darkens it up a tad, but penetrates and keeps from drying out.
So you are probably not thinking of attaching 3-4 shot glasses to one and having a shot ski?
cough they’re SKIS. It’s probably okay to get them wet. Wipe them down with a wet towel to get the dust and rub neatsfoot oil or mink oil into the leather. Don’t try to remove the wax from the bases, if there is any.
