    Worked last nite ! ( 1900-0700 ) : Now off for 3 days ! Yeah ! Plenty to do !!!

    Thinking maybe open face roast beef w-gravy & smashed tators & corn on the cob ????

    Will be an early ( to bed ) nite : then projects for the next few days ???

    Including looking at another truck(s) : Im wanting an extended cab 4x4 to replace my regular cab 4x4 ??? No real NEED : Just a want !!!

    Last night I took a fresh bought thick porterhouse steak and cut it into strips. Quick fried it up with a little butter and thin sliced Vidalia onions, and a few Morel sliced mushrooms. Added a dash of Worchestershister sauce and some salt & pepper.

    Then I took a couple of flour tortia's and steamed them up in the microwave. Added my steak concoction some lettuce, Colby shredded cheese, and dug into the fridge for some sour cream. Came up empty handed on the sour cream, but had a carton of French onion Hellofagood chip dip, so I was in business!

    A very old bottle of Franks hot sauce that still gets utilized came in handy as well with my meal. I thought about some kind of veggies but by the time I was done chowing, that thought diminished into the fog of ecstasy!! Burp :D

    Frito's bean dip tasted much better back when lard was the fat used to make it! The change to whatever they use now probably saved my life, but they lost a lot in the delicious taste it once had.

    I make my own bean dip using refried beans and some other additives that saves some bucks and gives me more dip to indulge in.

    Hey, the fairs I work at they get $6 for Fritos in a bag or Nachos in a bag and from what I see they sell quite a few.

    Cooking chicken thigh's on the grill today to supplement my 2 dogs feed. Will be adding a few extra seasonings along with some BBQ sauce on a few that will become part of my supper.

    Those along with some fresh made cole slaw and a baked potato should just about fill my hunger void for today.

    Oh yea, I may hit on a new smaller than half gallon size (they don't make half gallons anymore) bucket of Black Cherry Ice Cream from the freezer for desert.

    Now for the food issue : My parents are down from Illinois , My aunt ( Moms sister ) is really Bad !

    But on a good note : Mom is making her famous home-made Italian Beef tonite !!! Im gonna eat enough to kill a horse !!!!!!!!!

    I am making an El Diablo Sandwich and washing it down with a Dr Pepper ;)

    Diablo Sandwich Recipe Ingredients:

    1 pound of ground beef 80/20
    3/4 cup of diced tomatoes w/green chill's
    3/4 cup of canned corn or frozen
    3/4 cup of PBR
    taco seasoning to taste(One packet of Taco seasoning)
    Several Jalapeno's
    Some shredded Jack Cheese
    lettuce
    sour cream
    hamburger buns

    Diablo Sandwich Recipe Directions:
    Brown the ground beef. Add remaining ingredients except for lettuce, sour cream, Jalapenos, cheese and hamburger buns. Let the mixture stew anywhere from 15 minutes to one hour. The longer the better. I cook it for 40 minutes covered, and then uncovered for the remaining 20 minutes to thicken it up a bit as the liquid burns off. Place the lettuce on a bun, top with the El Diablo beef mixture, and then add some cheese and a dollop of sour cream.

    OK :

    Cooking "Fiesta Chicken" : it has become one of my favorite meals ! and Easy too !!! Yum !!

    Fiesta Chicken :

    boneless chicken parts ( enough to cover the bottom of the crock - more if needed ) :

    1 pack Ranch mix :

    1 pack chilli ( or taco ) seasoning :

    Garlic ( to taste ) :

    Ground black pepper :

    Beans of choice ( 1 - can Drained : chilli or black or red kidney or ? ) :

    1 - can of corn ( drained ) :

    1 - can Rotel ( or something sim. - Drained ) :

    1 - pack creme cheese :

    Japaleno peppers ( or other peppers to taste ) :

    Cook in crock till chicken is done : mixture will be thick and bubbling :

    Serve with tortilla chips and a salad and or rice and ???

    Really Good !!!

    Tonight's dinner is going to be very simple. Whole chicken wings salted and peppered cooked on the top rack of my grill. Sweet potato cut down the middle, washed and foil wrapped on the lower grill grate. A couple ears of fresh corn soaked in water and also cooked on the grill in their husks.

    About covers all the basic food groups for me. I have some good homemade barbeque sauce that has a bit of a brown sugar sweet and a Franks hot sauce tingle to it that I will use to dip my wings in. The sweet potato's and the corn will get more drizzled butter over them than my doctor will never hear about! Ohhhh?..and please pass the salt!
